Yoshida Shuzoten

Yoshida Shuzoten, established in 1870, is a premier brewery in Ishikawa, nurtured by the pure waters of the Tedori River in the nature-rich city of Hakusan. Boasting over 150 years of history, the brewery is currently led by its young 6th-generation head, who is boldly challenging the integration of traditional techniques with modern sensibilities.
Their hallmark is the use of 'Hakusan Hyakunen-sui' (White Mountain 100-Year Water)—pure underground water that has traveled through the earth for approximately a century, gaining exceptional clarity. This pristine water, combined with high-quality rice grown in partnership with local farmers and the expert skills of the Noto Toji, follows the philosophy of 'Wako-Ryoshu' (Harmony Breeds Good Sake) to produce ideal food-pairing sakes with a dignified transparency and mellow umami.
