Ohmine Shuzou is located in Beppu, Shuho-cho, Mine City, Yamaguchi Prefecture, an area where Akiyoshidai, Japan's largest karst plateau, spreads. They use 'Benten no Yusui' (Spring Water of Benten), which was selected as one of Japan's 100 Famous Waters, as brewing water, and this water contains moderate minerals influenced by the karst plateau, which has a good effect on fermentation.
The history of the brewery began in 1822, but operations stopped in 1955, and it was revived about half a century later in 2010 by Takeshi Akiyama, who is from the same Mine City. 'Akiyoshidai Benten no Yusui' is soft water but unusually high in calcium, helping yeast work and promoting fermentation smoothly even at low temperatures.
They use Yamada Nishiki, Omachi (Okayama), Dewasansan (Yamagata), and Aiyama (Hyogo) as premium sake rice, aiming to maximize the individuality of each rice. As of April 2019, it has already been distributed to Taiwan, Hong Kong, Singapore, Stockholm, and New York, and is handled by about 60 liquor stores in Japan, attracting attention as a brewery flying to the world.
