Yamasaki Honten Shuzojo has been brewing sake in Shimabara since 1884 (Meiji 17), dedicating over 130 years to the art of sake making. The brewery sells more than 100 varieties of products including sake, shochu, and liqueurs.
The brewing water comes from the beautiful spring water of Shimabara that wells up from deep beneath Mount Unzen Fugendake. This groundwater is subterranean flow from Mount Unzen, rich in minerals, having slumbered deep underground over many years before emerging as delicious mineral water. It is Shimabara's exceptional water that gives birth to exceptional sake.
The flagship brand "Fugendake" is a sake brewed with Shimabara's spring water, beloved as a representative brand of the Shimabara Peninsula. A sparkling version is also produced, supporting the region's food culture with a diverse product lineup.
At the Japan New Sake Awards held from 2010 to 2012, the brewery won gold medals for three consecutive years, combining Shimabara's abundant water resources with traditional brewing techniques in a commitment to community-rooted sake making.
