Morikawa Shuzo is a brewery founded in 1887, located in Yasuura-cho, Kure City, Hiroshima Prefecture. Motoharu Morikawa, a renowned master brewer (Toji) and the younger brother of the 7th generation owner, inherits traditional techniques and leads the sake brewing.
Since its founding, it has inherited the "soft water brewing method" traditional to Hiroshima Toji, using ultra-soft water springing from Mt. Noro in Setonaikai National Park. They continue to brew sake carefully, facing local rice such as Yamada Nishiki, which is said to be the pinnacle of sake rice.
The goal is sake as a "supporting actor." It features a gentle and deep taste that is not too assertive, enhancing the taste of food and calming the hearts of those who drink it.
