Minotsuru Shuzo, founded in 1868, is a brewery located in Kannabe-cho, Fukuyama City, which flourished as the political and cultural center of Bingo in the past.
Since its founding, it has continued sincere sake brewing, such as inviting the master craftsman Iwataro Hiramoto, one of the leading Toji, in the late Meiji period to improve brewing techniques.
For brewing water, it uses high-quality underground water from the Oda River, and carefully selects "Yamada Nishiki" and "Nakate Shinsenbon" for rice. It is Hiroshima's local sake brewed with reliable technology, having a history of winning gold prizes at the National New Sake Appraising and Deliberating Fair.
