Ayakiku Shuzo is a long-established brewery representing Kagawa Prefecture, founded in 1790 (Kansei 2) with a history of over 235 years.
Ayagawa Town is an area suitable for rice cultivation blessed by the Asan Mountains, with large temperature differences between day and night and many clear streams. They use the 'underground water of the clear stream Ayagawa that never runs dry' as brewing water. This soft underground water is low in iron and ideal for sake brewing, boasting an abundant volume.
Since its founding, they have based their sake brewing on local Kagawa Prefecture rice, focusing especially on sake brewing with the prefectural sake rice 'Oseto'. The sake brewing technology with Oseto established by Honorary Toji Hiroaki Kunishige is now inherited by his beloved disciple, Toji Shuichi Miyake.
They also develop products using Sanuki Olive Yeast, practicing sake brewing that fuses tradition and innovation. It is a brewery representing Kagawa Prefecture that continues to take on new challenges in line with the times while remaining rooted in the local area.
