A turning point in its history was the discovery in the early Meiji period of pure underground water from Mount Iide, which still bubbles up on the premises and supports their brewing today.
Their most distinctive feature is the creative "Musical Brewing," where they let the sake ferment while playing Mozart's music inside the ancient storehouse. This method, where tradition resonates with modern sensibility, has culminated in the flagship brand "Classic" (蔵粋). Mozart's melodies gently sway the yeast, maximizing the rice's umami to produce a mellow and dignified taste, highly acclaimed as a one-of-a-kind existence in the sake world.
