Ishikawa Shuzo

Ishikawa Shuzo, founded in 1883 by Wakichi Ishikawa, is a historic brewery located in Fussa City, Tokyo. The brewery grounds are home to six Tangible Cultural Properties of Japan, preserving the architectural beauty and spirit of the Edo and Meiji eras. Uniquely, Ishikawa Shuzo is a dual-producer of both Japanese sake and craft beer, operating as a comprehensive 'Brewery Theme Park' featuring a restaurant, museum, and shop alongside its production facilities.
Their brewing philosophy centers on the use of high-quality natural water (medium-hard) drawn from 150 meters underground on-site. Adhering to the traditional 'Kan-zukuri' method (brewing only during the cold winter months), they produce sake characterized by a smooth texture and a sharp, clean finish. Under the motto 'Sake that sings the heart of Tama, becomes the pride of Tama, and fills the hearts of the people of Tama,' they remain a cornerstone of regional culture.
