The brewery uses two distinct water sources: pristine groundwater from Toshigawa in the Usami Volcanic Belt and deep-layer water pumped from 1,000 meters underground in the Amagi Mountain system of Nishi-Izu Osouri. This use of different water sources allows them to express a unique variety of sake characters.
With a mission to create sake that harmonizes with the rich seafood and mountain produce of Izu, Mandai Shuzo pursues a flavor profile that complements the regional food culture.
