Nakamura Shuzojo is a venerable brewery in Kanazawa with over 200 years of history since its founding in the Bunsei era (1818-1830). While honoring tradition, it remains a pioneer in sustainable brewing as one of Japan's few 'Certified Organic Breweries.'
Using primarily contract-grown organic rice from the local Kanazawa farmer 'Kanazawa Daichi,' they practice brewing that is mindful of both the environment and health. Their quality is globally acclaimed, having earned four international organic certifications: JONA (Japan), ICEA (Europe), USDA (USA), and COR (Canada). In addition to traditional brands like 'Nichiei' and 'Kaga Setsubai,' they continue to create new value for sake from a global perspective, such as through collaborations with the world-renowned French chef Alain Ducasse. It is a leading innovative brewery in Ishikawa.
