Hirata Shuzojo is a brewery located in Hida Takayama, where the old townscape remains, and has been popularly known by the trade name "Utsuboya" since the Edo period. Initially engaged in the manufacture of Binzuke oil and candles, it later started the sake brewing business. Based on the belief that "sake is something to be nurtured rather than manufactured," it insists on handmade production and nurtures sake with a good balance of the five tastes (sweetness, dryness, acidity, astringency, and bitterness) using local sake rice "Hidahomare" and clear underground water from the Northern Alps.
