Ono Shuzo is a family-run sake brewery nestled in the mountains of Yufu City, Oita Prefecture, practicing meticulous sake-making with a commitment to handcrafting that is only possible through small-scale production. Leveraging Yufu City's environment of abundant water sources, diverse agricultural products, and pristine nature, it operates as a small rural brewery run solely by the family, emphasizing heartwarming handmade production. While originally producing nihonshu, the brewery now mainly focuses on barley shochu, with Oita barley shochu created from the philosophy of learning from the past for the future, featuring a deep flavor guided by traditional techniques. The barley shochu, crafted with attention to distinctive products using local ingredients, offers a nostalgic and warm taste. To maximize the quality of ingredients, the brewery has revived dormant atmospheric distillers, valuing traditional production methods.
