Led by the young master brewer Hidehiko Matsumoto, they pursue what sake should be in a new era, keeping the Zen word "Nichinichi Kore Kojitsu (Every day is a good day)" in heart.
To maximize the power of ingredients, they focus on rice from carefully selected production areas, including Yamada Nishiki from the Banshu region of Hyogo Prefecture. They brew everything using the traditional Kimoto method, pursuing the "transparency" of umami and pure "acidity" to the limit.
Fusing Fushimi's soft groundwater with a modern approach to traditional methods, they perform innovative yet somewhat nostalgic sake brewing that permeates the heart.
