Founded in 1712, Hikami Seishu is a long-established brewery with a history of about 300 years. They have been brewing sake for 15 generations in Yokota, Okuizumo Town, and Hikami Seishu Gomei Gaisha was established through the merger of three breweries.
A historically important achievement in sake brewing is the discovery of the original strain of Association Formless Yeast (Association No. 701, etc.). The president and master brewer at the time noticed that while white foam usually rises in the sake brewing vats, sometimes batches without foam appeared. The National Tax Agency's Brewing Research Institute studied and improved this to develop the current Association Formless Yeast. This yeast is now widely used in breweries nationwide and is known as a significant contribution to the sake industry.
They pursue sake brewing rooted in the climate of Okuizumo, characterized by a dry and rich sake quality that emphasizes the "balance of acidity" matching local food culture. While protecting tradition for over 300 years, they maintain an attitude of always aiming for quality improvement.
