Yachiya Shuzo is one of Kanazawa's oldest breweries, boasting a history of nearly 400 years since its founding in 1628. Its origins trace back to Niemon Kami-yachiya, a purveyor who accompanied Lord Maeda Toshiie from Owari Province to Kanazawa to brew exclusive sake for the Maeda clan.
Impressed by his loyalty and exceptional skills, the third Lord Toshitsune Maeda bestowed upon the brewery the house name 'Yachiya' (removing the word 'Kami' from his surname) and the brand name 'Kaga Tsuru,' combining 'Kaga' (the domain name) with 'Tsuru' (crane), a symbol of longevity. The main house and brewery, built in the mid-Edo period, are recognized as Registered Tangible Cultural Properties for their historic architecture reflecting traditional merchant life.
Guided by the belief that 'sake brewing starts with rice cultivation,' they work closely with local farmers to produce sake characterized by a 'rich (nojun) and deep umami' that perfectly complements the flavorful seafood of Hokuriku. After four centuries, it remains a prestigious brewery that continues to share the history of the Maeda family and the culture of Kanazawa.
