Nishimoto Shuzojo is a brewery in Aoya-cho, Tottori City, with a history of over 160 years since its founding in the late Edo period.
The biggest feature is that the San'in's first female chief brewer (Toji), Ms. Emi Toyosawa, manages the brewing. Based on the theory learned at Tokyo University of Agriculture and the National Tax Agency Brewing Research Institute, she makes sake utilizing sharp sensibilities unique to women. Using mainly sake rice "Tamasakae" from Tottori Prefecture, she sends out carefully made and delicate sake to the world.
