With a history of over 120 years, Ikezuki Shuzo is located in Hasumi, Onan Town, Shimane Prefecture, a village of returning to nature situated in the heart of the Chugoku Mountains on the border with Hiroshima Prefecture.
Adhering to the teachings of the predecessor that "Sake is not something people meddle with much, it is something to be brewed," they continue to press all their sake using the "Kibune Shibori" (wooden tank pressing) method. Natural spring water is drawn into the brewery from the mountains and used as brewing water. The water quality is ultra-soft, with a hardness of around 0.3.
By brewing with ultra-soft water, fermentation proceeds slowly, producing a soft, smooth, and highly aromatic sake. They primarily use contract-grown sake rice from the local area and brew all their sake by hand using the traditional wooden tank pressing method.
