Nozaki Shuzo is a historic sake brewery located in Tokura, Akiruno City, founded in 1884 by Kisaburo Nozaki. Nestled at the foot of Mt. Tokura Shiroyama, the brewery remains committed to traditional, handcrafted methods in a natural environment of West Tama. Their success is rooted in the soft subterranean water flowing from Mt. Shiroyama, which is exceptionally pure and ideal for sake brewing due to its low mineral content.
While many breweries have shifted to mechanization, Nozaki Shuzo continues to use the traditional 'Koshiki' (large steaming vat) and labor-intensive manual techniques. This dedication makes their sake a rare 'hidden gem,' as it is primarily sold through local liquor stores and select specialty shops, rarely found outside the Akigawa River basin. The flagship brand 'Kisho' combines the founder's initial 'Ki' (Jo) with 'Sho' (Correct), representing their philosophy of brewing 'honest and correct' sake that celebrates the natural blessings of the Akigawa Valley.
