Aizawa Shuzo is a traditional sake brewery in Sano City, Tochigi, founded in 1854. Known as the pioneer that commercialized the first Junmai-shu (pure rice sake) in Tochigi Prefecture, the brewery maintains a commitment to meticulous, small-scale production under the motto "Handmade with Sincerity."
A defining feature of the brewery is its Master Brewer (Toji), Akiko Aizawa, who was the first woman to hold that title in Tochigi. Leveraging a uniquely feminine perspective, she pursues sake that is gentle and easy to drink, expertly drawing out the natural umami of the rice.
The flagship brand, "Ainosawa," was named by infusing the family name "Aizawa" with deep affection ("Ai") for the craft.
