Using underground water from the Takahashi River and processing all ingredients by hand, it achieves a delicate, well-balanced flavor. Yoikigen also pursues innovative brewing using wild yeast from fruits, and the brewery's technique of fusing tradition with innovation is reflected in Hekiten.
