山丹正宗は、1831年(天保2年)創業の八木酒造部が醸す銘柄で、約190年の歴史を持つ今治地方の伝統的な日本酒です。
高縄山系の伏流水を仕込み水として使用し、酒造好適米「山田錦」を中心に醸される淡麗辛口の食中酒として定評があります。
瀬戸内海に面した今治市の穏やかな気候と、豊かな海の幸に合う酒質を追求しており、地元今治を中心に長く愛されている銘柄です。
伝統的な製法を守りながらも、時代に合わせた新しい酒造りにも挑戦し、幅広い層に親しまれています。
