The tradition of the brewery with 300 years of history and the aesthetics of "Kan-zukuri" (cold brewing) produced by the severe winter of Hida are condensed. Chigonoiwa
"Chigonoiwa" is a sake with an extremely good mouthfeel, using ultra-soft water with a hardness of only 7 for brewing water. The brand name was named from the wish that it would be a sake loved for a long time, like a rock that does not change even after many years. Maboroshi no Shiro
"Maboroshi no Shiro (Phantom Castle)" is a romantic brand named after the visionary appearance of Iwamura Castle floating in the fog. Iwamura Castle, one of Japan's three major mountain castles, was built on the summit of a mountain at an altitude of 717 meters, and was also called "Kirigajo (Fog Castle)" because of the climate where fog easily occurs. "Onozakura" is a brand named after the beautiful row of cherry blossom trees in the local place name "Onozawa." For the raw rice, it uses 100% locally produced "Hidahomare" grown by the brewery family themselves. It is a Junmai sake with a plump and gentle taste, where the umami of the rice is fully brought out, created by consistently performing everything from rice cultivation to sake brewing.
Taikobo
"Taikobo" was the representative brand of Marutaya Shuzo, named after the sage Taikobo Ryosho (Lu Shang) of the Zhou Dynasty in China. It is an auspicious name also known as a synonym for anglers, from the historical fact that Taikobo hung a fishing line and waited for the time. It is a phantom sake that was once familiar to the people of Nakatsugawa but can no longer be tasted.
Hakuin Masamune
"Hakuin Masamune" is a prestigious brand named after the Zen master Hakuin Ekaku (1685-1768), revered as the revitalizer of the Rinzai sect of Zen Buddhism. The name was born from the master's origins in Hara-juku, Numazu, combining his posthumous imperial title 'Masamune' with the term for refined sake.
