「小左衛門」は創業者・中島小左衛門用信の名前にちなんで命名された銘柄です。
当時主流だった淡麗辛口とは対照的に米の旨味を前面に出した味わいで注目を集め、屏風山の古代海底層を通過したミネラル豊富な軟水が「小左衛門」の味わいを作り出しています。
地元のひだほまれや美濃瑞浪米をはじめ、山田錦、愛山、備前雄町など多様な酒米を使い分け、それぞれの米の個性を引き出した酒造りが特徴で、地元に愛される酒造りを実践しています。
