Kawakei Shoten is a sake brewery founded in 1902 (Meiji 35) by the first generation, Keiji Kawana, in Wakuya Town, and later moved to Misato Town (formerly Nango Town) where it is today.
The name of the main brand "Koganesawa" is derived from the fact that sake brewing began near a stream where gold flowed near Wakuya Town, the oldest gold production site in Japan, which was also mentioned in the Man'yoshu. Another brand, "Tachibanaya," began production in 1997 (Heisei 9).
As a participating member of the DATE SEVEN project, they participated in an initiative where seven talented breweries in Miyagi Prefecture (Katsuyama, Urakasumi, Suminoe, Hakurakusei, Yamawa, Hagino Tsuru, Koganesawa) gathered, and served as a leader brewery together with Urakasumi in Episode 1 of SEASON II.
They specialize in traditional Yamahai brewing, and are characterized by the technique of finishing Yamahai sake, which is generally considered to be heavy and complex, into a surprisingly light and clean taste.
As a talented brewery in Miyagi Prefecture, they continue to take on new challenges while protecting traditional techniques, contributing to the improvement of sake brewing technology in Miyagi through collaboration.
