Rokkashuzou

Rokka Shuzo Co., Ltd., located in Mukaigase, Hirosaki City, was established in 1972 through the merger of three historic local breweries: Imai Shuzoten, Takeuchi Shuzoten, and Kawachiya Hashimoto Shuzoten.
The flagship brand "Joppari," named after the Tsugaru dialect for "stubborn" or "unyielding," is a dry sake crafted by the first master brewer, Mr. Takezawa, who remained true to his vision despite the trends of the time.
Using pure underground water from the Shirakami-Sanchi mountains and locally grown "Hana-fubuki" sake rice, the brewery maintains a quality-first approach, with a particular focus on the koji-making process.
In the 1980s, they built a large-scale brewing facility on the outskirts of Hirosaki, where they continue to blend modern technology with traditional techniques.
