Nakashimaya Brewery (Nakashimaya Shuzojo) is a long-established brewery where the tradition of sake brewing has been passed down for about 200 years since the Edo period, and is currently led by the 12th generation head, Nobuhiro Nakamura. Located in Shunan City, Yamaguchi Prefecture, they practice sake brewing that fuses traditional methods with modern quality control.
The sake brand 'Kanenaka', brewed using the 'Kimoto-zukuri', an orthodox brewing method handed down from the Edo period which has now become rare, has received high evaluation both in Japan and overseas, including winning the top prize in the SAKE division of the IWC (International Wine Challenge) 2020.
Due to the time-consuming and labor-intensive method of Kimoto-zukuri, which takes about one month to create the yeast starter, the aroma and taste originating from Kimoto are unique, realizing a strong body where umami and swelling acidity also correspond to hot sake. They develop three brands: the locally rooted brand 'Kotobuki', the innovative 'Kanenaka', and 'Nakashimaya' bearing the trade name.
