Kawai Sake Brewery is the only surviving brewery in Imai-cho, Kashihara City, with a long history of being founded in the Kyoho era of the Edo period (around 1730).
The main building, designated as an Important Cultural Property, conveys the townhouse architecture of the Edo period directly to the present, and has been familiar under the trade name "Jobonjiya". Surrounded by the Yamato Three Mountains, they continue to protect traditional sake brewing along with the atmosphere of Imai-cho, which retains the vestiges of the Middle Ages.
Using underground water from the Kongo mountain range and carefully selected sake rice, brands such as "Shusse Otoko", which are particular about handmade, fascinate many drinkers with their careful brewing and deep taste.
