Matsunami Shuzo, established in 1868, is a historic brewery in Noto Town, Ishikawa, where it crafts sake through meticulous 'Gokkan-shikomi' (mid-winter brewing) led by the expert Noto Toji. The brewery is widely beloved for its flagship brand, 'Oeyama,' more so than the company name itself, among locals and enthusiasts alike.
They utilize pure, soft water drawn from a century-old well within the brewery grounds. Focusing on local Ishikawa rice such as 'Gohyamangoku' and 'Ishikawa-mon,' they continue to produce sakes that harmonize with the culinary culture of Oku-Noto, characterized by a clear profile that nonetheless expresses the rich character of the rice. Despite the severe damage of the 2024 Noto Peninsula Earthquake, which resulted in the total collapse of the brewery, they are persistantly working to preserve their traditional flavors through collaborative brewing and technical cooperation with like-minded breweries such as Kaetsu, Tsuchida Shuzo, and Ito Shuzojo. Their resilience in the face of adversity perfectly embodies the strength and warmth of the Noto spirit.
