It is a historic brewery that started brewing sake with special permission from the lord of the Hirose domain. For brewing water, they use super soft water with a hardness of 0.3 known as the famous water "Iwasaka Spring Water." They have protected sake brewing with a transparent and gentle taste woven by high-quality sake rice from Shimane Prefecture and this soft water for over 280 years.
