Ikeda Shuzo, founded in 1879, is a brewery located along the Yura River in Maizuru City, Kyoto. After a period of production halt, they are now known as a passionate brewery that has achieved revival with the goal of "All Maizuru" sake brewing.
Loving the climate of "Sea Kyoto" facing the Sea of Japan, they use underflow water of the Yura River for brewing and only local rice grown in the Yura River basin. They maintain pride as a Junmai-only brewery, brewing only with Maizuru's rice, water, and human hands.
Their brewing, which believes in the power of rice without using any brewing alcohol or additives, creates a deep taste where strong yet gentle acidity and the pure sweetness of the ingredients are dissolved together.
