Hanamori Shuzo is a brewery founded in 1886, located in the middle reaches of the Kiso River. Emphasizing traditional methods, it performs careful brewing using hand-washed koji rice, traditional box koji making, and the rare "Yaegaki" press, which is one of the few in the prefecture. The representative brand "Hanamori" is evaluated as high-quality sake, with its Junmai Daiginjo winning the Governor's Prize at the Gifu Prefecture New Sake Appraisal. "Kutami" is a Junmai Ginjo using rice cultivated by a group of young producers in the local Kutami Kogen, and is a community-based unfiltered unpasteurized undiluted sake (Muroka Nama Genshu).
