Founded in 1872 (Meiji 5), Otani Shuzo is located at the foot of Mt. Daisen, the highest peak in the Chugoku region. With the belief that "sake is not made, but brewed," they continue to protect traditional techniques with gratitude to nature and reverence for microorganisms.
The main ingredient uses the phantom sake rice "Goriki," which originated in Tottori Prefecture. They are working from revival cultivation and pouring passion into maximizing its charm. Sake nurtured by clear underground water gushing from the Mt. Daisen system and the cold climate spreads the plump umami of rice within the sharp dryness.
