Asahara Shuzo, founded in 1882 in Moroyama Town, Iruma District, Saitama Prefecture, is a brewery where tradition and innovation are perfectly harmonized. Since the founder Zenjiro Asahara was from Shiga Prefecture (Omi), it has passed down brewing through generations with respect for that origin.
The greatest strength lies in the clear water nurtured by the mountains of Okumusashi and diverse brewing techniques not bound by fixed concepts. The flagship brand "Biwa no Sasanami" (Ripples of Biwa) is a historic masterpiece infused with the founder's wish for "happiness to spread from one point to another," longing for Lake Biwa in his hometown Omi. Additionally, it carefully brews brands where roots and regional attachment resonate, such as "Musashino," expressing the strength of the Musashino Plateau, and "Omiya," bearing the former shop name.
Asahara Shuzo is also known as a pioneer expanding the possibilities of sake. Its product development responding to diverse preferences is highly evaluated domestically and internationally, including "Daika no Kura" peaking in fruity Ginjo aroma, liqueurs, and "Acqua Dolce" proposing new lifestyles. Based on traditional techniques, its attitude of constantly challenging while looking "ahead" makes it a creative prestigious brewery continuing to transmit fine sake from local Moroyama that surprises the world.
