In Toyohashi, where many breweries once stood side by side, it remains one of the precious few still brewing today, prioritizing "local production for local consumption."
The most distinctive feature of this brewery is its use of underground water from the same vein as the "Eisen no Izumi" spring, which Tokugawa Ieyasu is said to have enjoyed. Using this fresh water nurtured by Toyohashi's rich nature, and focusing on Aichi's sake-brewing rice "Yume Ginga," local craftsmen brew sake that "complements meals," bringing out the best in food through local ingredients and traditional techniques.
