Miki City is Japan's largest producer of "Yamada Nishiki," the king of sake rice, and the brewery is located in an area that produces the highest quality Yamada Nishiki as a Special A district.
The brand name "Aoitsuru" was named after the crest "Aoi" (hollyhock) of Matsuo Taisha Shrine in Kyoto, which is deeply worshipped by breweries nationwide, and the auspicious bird "Tsuru" (crane), which is said to be a sign of auspicious events.
It is characterized by a mellow and umami-rich sake that uses plenty of locally produced Yamada Nishiki, and "Aoitsuru Daigin Koshu," which is Junmai Daiginjo aged for 20 years, won the gold medal in the aged sake category at the sake competition KuraMaster 2024 held in Paris, France.
As the only brewery standing in the sacred place of Yamada Nishiki, it insists on sake brewing utilizing local high-grade sake rice, and has gained high praise in the field of long-term aged sake (old sake).
