Daiwa Sake Brewery is a sake brewing company established in Akashi City in 1955, after the war.
A company that had been brewing sake in China restarted in Akashi after the war, and three breweries in the same district gathered to establish "Daiwa Sake Brewery".
It has a unique business model in which almost all of the brewed sake is supplied to Hakutsuru Sake Brewing in Higashinada Ward, Kobe City, and sold as the Hakutsuru brand.
With its independently developed "continuous mash press", it has established a production system that fuses traditional sake brewing technology with technology that separates sake and sake lees in a short time.
Large 7-ton brewing storage tanks are lined up inside the brewery, boasting the largest production volume in the city. About 10 brewers from the Hokuriku region and within the prefecture cooperate to brew sake.
