Gochouda Shuzo was founded as a branch family of Seto Shuzo and brews the sake "Azumaichi" in Ureshino City. The name "Azumaichi" was given with the wish to become the "Number One Sake in the Orient" (Toyo-ichi). Under the philosophy that "people, rice, and brewing become one to brew good sake," the brewery has continued its own cultivation of Yamada Nishiki rice. At the time, Yamada Nishiki was difficult to obtain within Saga Prefecture, so a group of growers centered on the brewery workers went through trial and error to devise seedling raising methods and manage water and fertilizer. It features a gentle aroma that makes use of the umami of rice, and a sake quality where acidity, sweetness, and bitterness are harmonized. To bring out the umami of rice, they are particular about low-temperature long-term fermentation ginjo brewing. By slowly fermenting yeast self-cultured based on Kumamoto yeast at low temperatures, they create sake that has a solid flavor while wearing a ginjo aroma.
