Kakuboshi is a sake brewery founded in Kesennuma City in 1906 (Meiji 39). The origin of the trade name "Kakuboshi" comes from the Morning Star (Venus) reflected through a sacred mirror in a one-sho masu box filled with sake when Tahei Saito prayed for brewing safety.
The name of the main brand "Mizutoriki" is named with the brewer's intention to "record" (Ki) the story of sake, representing the left side "Sanzui" of the kanji character "Sake" as "Mizu" (Water) and the right side "Tori" as "Tori" (Bird). It currently accounts for about 70% of the shipment volume.
The main store and shop were washed away by the tsunami caused by the Great East Japan Earthquake in 2011 (Heisei 23), and the brewery where sake was made was also severely damaged by the shaking of the earthquake. However, they restored the main store and shop over 5 years, and from the autumn of 2021 (Reiwa 3), they chose a closed elementary school as a new location and resumed sake brewing.
With the concept of "Sake that doesn't interfere with meals and is delicious to the last drop," they brew sake accompanying meals that snuggles up to the rich seafood of Kesennuma, and have received high praise such as winning the Gold Prize at the National New Sake Appraisal.
As a brewery that continues to be loved in Kesennuma, they are challenging sake brewing to open up a new era while achieving reconstruction from the earthquake disaster.
