Azumamine Shuzoten is located in Shiwa Town, and the brand name "Azumamine" was named after the highest peak of Mt. Azumane towering behind the brewery. It is one of the smallest breweries in Iwate Prefecture, with brothers sharing the roles of brewery owner and Toji, and is a small brewery with an annual production of about 30,000 bottles (1.8L conversion).
Using the soft groundwater of Mt. Azumane and local Iwate Prefecture rice (including self-cultivated rice), they aim for Iwate's sake considered by the 13th generation brewery owner to be "sake where the umami of rice is firmly felt, there is aroma, and there is sharpness."
They have declared all Junmai sake (only Junmai Daiginjo, Junmai Ginjo, and Junmai sake) and have set forth a policy of not manufacturing any sake with added brewer's alcohol, sticking to the quality-first principle. It is characterized by careful manual work unique to a small brewery and sake brewing rooted in the region.
