Konishi Sake Brewing is a prestigious brewery founded in 1550, brewing "Shirayuki," the oldest existing sake brand in Japan.
In Itami, the birthplace of refined sake, it established the technique of Itami Morozumi and gained high acclaim in Edo as "Kudari-zake" (sake sent from Kansai to Edo) during the Edo period.
In 1694, it became the first producer to open a sake wholesale store in Kobikicho, Nihonbashi, Edo, and was loved by cultural figures, such as Rai Sanyo visiting and composing poems praising Shirayuki.
Currently, it not only manufactures sake but also brews beer and sells imported liquor, operating tourist facilities as Shirayuki Brewery Village Choju-gura.
The story of Itami and Nada-Gogo, famous brewing areas created by "Itami Morozumi" and "Nada no Ki-ippon" Kudari-zake, has been registered as a Japan Heritage site, and Konishi Sake Brewing conveys Itami's sake culture to the present as a central figure.
