Ozawa Shuzo, founded in 1702, is a prestigious brewery with over 300 years of history, located in the scenic Okutama region of Tokyo. Nestled in Sawai along the upper reaches of the Tama River, the brewery thrives on the natural bounty of its surroundings. A key secret to their diverse and high-quality sake is the use of two distinct water sources: medium-hard water from the 'Kura Well,' dug 140 meters horizontally into the bedrock on-site, and soft water from the 'Mountain Well' across the river.
By selecting the ideal water for each specific sake style, they produce a range characterized by a refreshing aroma and a remarkably clean finish. The brewery grounds have evolved into a major cultural hub called 'Sawanoi-en,' featuring restaurants, cafes, and museums.
