Haginishiki Shuzo was founded in 1876. It is a highly capable brewery located near the pristine Abe River that flows through Shizuoka City. Its history began when the founder fell in love with the pure water of the Abe River and started brewing in this area. Today, the brewery continues careful, family-centered production, with the former head's wife serving as the Toji (master brewer).
Their greatest pride is the 'groundwater from the Abe River' used for brewing. Selected as one of the '100 Famous Waters of the Heisei Era' by the Ministry of the Environment, this water is clear, soft water that naturally wells up from 60 meters underground. This blessed water imparts to Haginishiki's sake the transparency characteristic of 'Shizuoka Ginjo' and an incredibly gentle mouthfeel. Every step is performed in 'small batches' by hand, with thorough management from rice washing to water absorption to maximize the rice's umami.
