Guided by the philosophy of "In-house Brewing of Fine Towada Wine," they produce authentic local sake using local rice, water, and brewers from Towada.
They use subsoil water from Mt. Hakkoda and the Oirase River, and their primary raw materials are Aomori-grown sake rice varieties such as "Hana-omoi" and "Hana-fubuki."
Toji (master brewer) Takumi Sato, a Towada native and certified Nanbu Toji, focuses on extracting the rich flavors of the rice, consistently aiming for a "delicious and savory" sake.
