Inahana Shuzo is a historic brewery established about 450 years ago when a samurai family who moved from Mino Province started brewing sake taking the opportunity of a bountiful rice harvest. Located in Ichinomiya Town, the southernmost tip of Kujukuri Beach and known as a mecca for surfing, it engages in community-based sake brewing with the slogan "We continue to brew sake diligently in the surfing town of Ichinomiya." It was the first brewery in Japan to adopt "flat rice polishing," pursuing a clear taste with little miscellaneous flavor and a balance of "richness and sharpness" that goes well with seafood.
