With the philosophy of "sake brewing without a ceiling (limit)," they cherish the attitude of continuing to be creative and ingenious in search of better sake, not satisfied with the status quo. The biggest feature is their commitment to aged sake that takes time and effort. By carefully aging it for about two years after production, they bring out mellowness and depth that newborn sake does not have.
