Kubo Shuzo

Kubo Shuzo is a historic brewery founded in Usa City in 1789 (Kansei 1). The brewery is situated within the grounds of Kifune Shrine, which enshrines the water deity Ryujin (Dragon God), and this Ryujin faith has deeply influenced the brewery's sake-making.
Using subterranean water from the Yakkan River, the brewery carries on over 200 years of traditional techniques in a water-blessed environment. On the sacred grounds of Kifune Shrine, the brewing process is imbued with gratitude toward nature's blessings and the gods.
Today, the brewery leverages both sake and shochu production techniques, pursuing a light and mildly sweet sake profile suited to the local climate. It produces mellow sake with a beautifully sweet finish that pairs well with Oita's seafood.
While cherishing traditional methods, the brewery has also adopted modern quality control to achieve consistently high-quality sake, serving as a source of regional pride that expresses the terroir of Usa.
