They are brewing sake by fusing the traditional techniques of Izumo Toji with the latest technology. The biggest feature is the ancient manufacturing method that reproduces the "Yashiori Sake" appearing in Izumo mythology. Using "Saijo-jikomi" (re-brewing), where sake is used instead of brewing water, a rich and deep taste is realized. It is a unique brewery that makes you feel history and romance.
