Houken Shuzo is a brewery founded in 1872 (Meiji 5), located in Nigata-cho, Kure City.
Using the famous water "Houken Meisui" (soft water) that springs within the brewery as brewing water, they are pursuing the "ultimate food sake" centered on the young Toji, Tetsuya Doi (commonly known as Doitetsu).
While making full use of Hiroshima's soft water brewing method, it is characterized by a sharp taste with restrained sweetness ("Houken-style dry") and gathers passionate support from sake fans nationwide.
