Bajo Shuzojo is a brewery founded in 1893 (Meiji 26), located in Kumano Town, Aki District, known as the town of brushes.
Although closure was considered at one point, it restarted in 2022. Using traditional tools such as Japanese cauldrons (Wagama), wooden steaming vats (Koshiki), and koji trays (Kojibuta), they stick to handmade sake brewing without sparing any effort.
The representative brand "Daigorei" is a sake that is tasteful and makes you feel nostalgic. By the hands of Toji Kazuya Murakami, who trained at Taketsuru Shuzo and Kitajima Shuzo, powerful yet gentle sake that maximizes the individuality of Hiroshima's sake rice and yeast is created.
