The founder, Shojiro Nagai, was so captivated by the purity of Kawaba's water that he established the brewery here in 1886.
To safeguard their water source, the brewery owns and actively protects the surrounding forests, ensuring the ecological integrity of their environment.
The water, naturally filtered from snow and rain on the Oze highlands, is incredibly soft with a subtle sweetness and rich mineral content.
Their flagship brand, "Mizubasho," is crafted using premium Yamada Nishiki rice from Hyogo and locally grown Kawaba rice, resulting in a sake known for its elegant, fruity aroma and exquisite refinement.
